Unusual Sunday lunch starters and Italian themed lunch

Tangy Thai Prawns

Simply blanch fresh tiger prawns in boiling water until pink – careful not to over-cook as they will become rubbery. Serve on a starter plate with coriander leaves and a generous drizzle of Tangy Thai sauce.

Tangy Thai Sauce Recipe (for 4)

1 lemon

One clove of garlic (freshly crushed squeezing out all juice and oil)

2 tablespoons of sesame oil1 teaspoon of toasted sesame seeds

2 tablespoons of hazelnut oil

Splash of light soya sauce

1 small finely chopped fresh chilli to taste (deseeded if required)

Black pepper

Shake ingredients well in a conventional dressing bottle or jam jar and drizzle over hot prawns. Serve immediately!

(For extra juicy prawns, cook them in their shells and serve sauce on the side in small dipping bowls.)

Smoked Mackerel & Horseradish Pate

Smoked mackerel fillets (allow one fillet per couple)

1 generous teaspoon of fresh horseradish sauce

1 teaspoon of double cream

Black pepper

Fresh chopped parsley

Remove skin and bone from smoked mackerel and blend with the horseradish sauce, double cream, ground black pepper and chopped parsley.  Blend together until they form a smooth paste and serve with toasted, cold, white or brown bread.

Devil’s Berry - Hot Cranberry SauceCranberry sauce1 fresh red chilli

Finely chop red chilli and mix evenly into a pot of cranberry sauce. A perfect accompaniment to any roast.
