The Easiest Cake Ever!
If you've ever had a disasterous baking session and been put off making cakes - then this is the receipe that will restore your faith!
With the great fresh taste that hints that summer's just round the corner, this lemon drizzle cake couldn't be simpler or tastier. Everyone will be back for more.
Ingredients:
225g butter at room temperature
225g golden caster sugar
225g self raising flour
4 eggs
Zest of 2 lemons
For the drizzle:
Juice of 2 lemons
85g sugar
Instructions
1. Heat oven to 180 degrees / gas mark 4
2. Beat the butter and sugar together until light and fluffy.
3. Add the lemon zest and stir.
4. Add one egg followed by a quarter of the flour then mix.
5. Repeat step 4 until eggs and flour are all combined.
6. Grease and line a loaf tin with baking parchment, then pour in mixture and bake for 45-50 mins.
7. Remove from oven.
8. Prick the warm cake all over with a fork
9. Stir remaining 85g of caster sugar into the lemon juice then pour over the cake
10. Leave in the tin to completely cool
11. Tuck in!
