Cherry Tomato Tarte Tatin

The perfect quick, easy (and veggie) dish for Autumn...


2x Shallots, finely diced

1x Clove of garlic

1x Sprig of rosemary

1x Sprig of thyme

1 tbsp Brown sugar

2 oz Salted butter

2 tbsp Red wine vinegar

10 oz Cherry tomatoes

6 oz Puff pastry


4 oz Goat’s cheese


1)      Chop shallots, garlic, rosemary and thyme

2)      Caramelise brown sugar

3)      Combine chopped ingredients, caramelised sugar and butter

4)      Add vinegar

5)      Add cherry tomatoes and simmer for 5 minutes

6)      Roll puff pastry

7)      Add cherry tomato mixture to greased pie dish

8)      Top with puff pastry cut to size of pie dish

9)      Cook in pre-heated oven at 160 degrees for 35 minutes

10)    Take out of the oven and place plate on top of dish, then quickly turn out upside down

11)    Remove dish from top

12)    Tidy up excess

13)   Garnish with crumbled goat’s cheese and picked basil.
