Partridge with cavolo nero and blueberry gravy

Recipe for 4

Ingredients:

4x Partridge

4x Strips of bacon

8x Leaves cavolo nero

Oil

2x Shallots, finely diced

8x Chestnut mushrooms

1 tbsp Balsamic vinegar

6oz Blueberries

¼ pint Gravy

2oz Butter

 

Technique:

Partridge

Add strip of bacon

Oven bake for 10 mins at 180°C, then remove from oven and carve 

Blanche the cavolo nero for 30 seconds and remove from pan

 

Sauce:

Add oil, shallots, mushrooms, balsamic, blueberries and gravy

Simmer for around 3-4 mins then add a lump of butter, melt and serve
