Steak with red wine and blue cheese sauce
4x 250g Steaks
200g Shropshire blue cheese
4x Pickled walnuts
200ml Red wine
4x Shallots, finely sliced
Add red wine and shallots to pan then reduce by half.
Chop Shropshire blue and pickled walnuts.
Add gravy, Shropshire blue and pickled walnuts then leave in pan to melt.
Season steak with rock salt and crushed black pepper, then rub with oil.
Make pan smoking hot then add steak – cook to preference.
Leave to rest for 3 minutes and then add sauce.
